EASY HOMEMADE BEEF STEW RECIPE

Make your beef stew healthier. Add more vegetables and fiber for a heartier and healthy beef stew. We have forgotten about most ancient grains that provide protein and fiber to our meals. Ancient grains like barley and farro keep us satisfied to avoid carbohydrate cravings. Feel free to add brown rice or quinoa to any dish especially soups and stews. What makes this stew healthier is also the various vegetables we are adding. Fiber-rich colored potatoes, carrots, celery, and peas.

Ingredients

  • 1-2lbs Chopped Stew Beef
  • ½ Diced Yellow Onion
  • 3 Stalks of Celery
  • 2 Diced Tomato or Can
  • 3-4 Chopped Carrots
  • 6 Purple and Red Mini Potatoes
  • 1 Cup of Green Peas
  • 4 Sprigs of Chopped Parsley
  • 1 Cup of barley

Instructions

First chop the boneless sirloin beef into cubes or purchase chopped. In a large pot saute meat in Grapeseed oil until lightly browned. Remove the meat from the pot onto a plate. The sautee onion, celery, and tomatoes. Once these are browned add barley, carrots, and potatoes along with 6-7 cups of water. Add the meat back into the pot as well. Cook for about 30-40 minutes until veggies and meat are soft. Finally, add the frozen peas and parsley.  Cook for another 5 minutes.

Serve warm and enjoy your fiber rich stew.
